I recently jumped on the spiralizing craze. I know, I’m a little late to the party, but better late than never, right!? Part of eating right with PCOS is trying to eliminate unnecessary carbs and the spiralizer is a great way to help me achieve that. They are also incredible easy and fast to make, which is such an added bonus. I found this recipe on skinnytaste.com. If you haven’t checked out the site, I highly recommend it. There are so many wonderful and healthy recipes available.

- freshly ground black pepper
- 1 tbsp chopped fresh parsley leaves

In a large nonstick pan, melt the butter and 1 teaspoon olive oil over medium heat. Add the garlic and saute for 1 minute. Add the shrimp, kosher salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Set aside.
Add the remaining oil and garlic to the skillet, cook 30 seconds then add the zucchini noodles, kosher salt and pepper. Cook 2 minutes, stirring.
Remove from the heat, add the shrimp, parsley, lemon zest, lemon juice, and red pepper flakes. Toss well to combine and serve immediately.
This recipe was incredibly fast and easy to make. I give it a four out of five star rating. Shrimp is one of my favorite things to eat and if I can combine if with something healthy and full of flavor it’s a winner in my book. I highly recommend anyone to give this recipe a try. I hope you all enjoy!
